Italian Chicken Soup
Time: 35 minutes
Serve: 6
Ingredients:
          1 lb chicken breasts, boneless and cut into chunks
          1 1/2 cups salsa
          1 tsp Italian seasoning
          2 tbsp fresh parsley, chopped
          3 cups chicken stock
          8 oz cream cheese
          Pepper
          Salt
Directions:
  1. Add all ingredients except cream cheese and parsley into the instant pot and stir well.
  2. Seal pot and cook on high pressure for 25 minutes.
  3. Release pressure using quick release. Remove lid.
  4. Remove chicken from pot and shred using a fork.
  5. Return shredded chicken to the instant pot.
  6. Add cream cheese and stir well and cook on sauté mode until cheese is melted.
  7. Serve and enjoy.
