FRIENDLY COCONUT PIE

There comes a time when somebody you know needs a pie. You just know it when you see them—or when you’ve caught wind of something going on. This pie starts with a frozen piecrust (whether your own or the grocer’s), so it comes together quickly. I’m not saying pie can fix anything, but what I am saying is that taking a friend a pie—stopping in and showing up—well, that can only help.

Makes one 9-inch pie

2 EGGS

1 CUP SUGAR

4 TABLESPOONSSTICK) BUTTER, AT ROOM TEMPERATURE

1 HEAPING CUP SWEETENED FLAKED COCONUT

½ CUP MILK

PINCH OF SALT

1 TEASPOON VANILLA EXTRACT

ONE 9-INCH PIE SHELL

1. Preheat the oven to 325˚F.

2. Using an electric mixer, beat together the eggs, sugar, and butter in a large bowl until well combined. Stir in the coconut, milk, salt, and vanilla.

3. Pour the batter into the pie shell and bake until the center is only the slightest bit jiggly and the crust is lightly browned, about 45 minutes. Let the pie cool for 10 minutes before serving.

SOUTHERN SIMPLE: If you know the intended recipient for this pie is a chocolate fan, sprinkle ½ cup semisweet chocolate chips into the mix before it goes in the oven.
