I do love a rainy night, bundled up on the couch with my hubby and daughter. A movie and some sweet and salty snack—that’s a perfect night. Even if we can all recite the words and songs to all the “princess films,” it’s still fun to giggle and sing along.
One of my favorite movie-night snacks is these baked fries, served along with a double-feature ketchup with berry-sweet tartness and chipotle heat.
Makes 4 servings
3 LARGE SWEET POTATOES, UNPEELED, CUT INTO WEDGES
2 TABLESPOONS CHOPPED FRESH PARSLEY
2 TABLESPOONS OLIVE OIL
SALT AND FRESHLY GROUND BLACK PEPPER
1 PINT RASPBERRIES
1 CUP KETCHUP
¼ CUP TABASCO CHIPOTLE PEPPER SAUCE
1. Preheat the oven to 375˚F. Line a baking sheet with foil.
2. Combine the sweet potato wedges, parsley, olive oil, and salt and pepper to taste in a large bowl. Toss well to coat the potatoes evenly. Spread them out on the lined baking sheet and bake until crispy and golden brown, 20 to 25 minutes.
3. Meanwhile, puree the raspberries in a blender. Pass the puree through a fine-mesh sieve over a bowl (discard the seeds). Add the ketchup and chipotle sauce to the bowl and mix well. Season with salt to taste.
4. Serve the fries hot with little dishes of the ketchup on the side.
SOUTHERN SIMPLE: This ketchup wakes up grilled salmon or chicken sandwiches, too.
