LAZY WOMANS STRAWBERRY PIE

It’s not like a lazy woman would be making a pie in the first place, and it’s an 8-inch square, so the whole name of this warm strawberry dessert is ridiculous. Makes me love it all the more! This recipe comes together in a flash and is perfect for making away from home. Five ingredients, one dish, and three minutes to oven time. That’s how a “lazy” woman on the run gets dessert done!

Makes 6 servings

8 TABLESPOONS (1 STICK) BUTTER

1 CUP SUGAR

1 CUP SELF-RISING FLOUR

¾ CUP MILK

ONE 10-OUNCE PACKAGE FROZEN SWEETENED STRAWBERRIES, THAWED

1. Preheat the oven to 350˚F.

2. Place the butter in an 8-inch square glass baking dish. Place the dish in the oven to melt the butter.

3. Meanwhile, combine the sugar and flour in a medium bowl. Add the milk and stir until well combined.

4. Pour the mixture into the pan on top of the melted butter, but do not stir. Pour the strawberries over the top. Again, do not stir! After all, this is a lazy woman’s pie!

5. Bake for 45 minutes, or until the top is golden brown.

SOUTHERN SIMPLE: Serve this “pie” warm with vanilla frozen yogurt.

SOUTHERN SIMPLE: For a tangy version, use sweetened frozen raspberries, and drizzle it with chocolate sauce when it comes out of the oven.

When I was pregnant with Daisy, I thought a lot about what my child would be drawn to. At times I secretly hoped that she would want to be a teacher or doctor or vet and have very little inkling for the pursuit of music, only because the music business can be a real heartbreaker and very difficult. To see how music affects her—and how she affects others through her love for it—makes me an incredibly proud mommy, and I’ll be her biggest fan whether she’s standing on a classroom stage or on the world’s biggest musical stage.
