SKINNY SOUTHERN SWEET TEA

I like my tea like I like my tea. When you’re on the road, it can be hard to find a good sweet tea! Those bottled concoctions just don’t cut it. When I head out on the road, I make sure I have this sweet, sweet mint and citrus tea.

Makes 2 quarts

4 FAMILY-SIZE TEA BAGS

1 CUP SUGAR

¾ CUP SPLENDA

2 LEMONS, SLICED

2 LIMES, SLICED

5 MINT SPRIGS

1. Place the tea bags and 2 quarts water in a large saucepan over medium-high heat. Bring to a boil. Remove from the heat and steep for 20 minutes.

2. Pour into a gallon jar or jug and add the sugar and Splenda. Stir until the sugar is dissolved. Fill the rest of the gallon jar with cold water. Add the lemon and lime slices and mint sprigs. Serve over ice.

SOUTHERN SIMPLE: If I’ve got a thirsty bunch and am in a hurry for my tea to be done, I’ll add ice to the hot tea after it steeps to cool it down quickly, then cold water to fill up the gallon jar. That way the ice won’t melt and water down the tea when you pour it over the ice. Watered-down sweet tea is not good sweet tea!
