Florida-Style Beignets

1 cup water

1 cup whole milk

1 medium egg

3 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon salt

2 teaspoons sugar

Pinch of nutmeg

Vegetable oil for frying

Confectioners’ sugar, for garnish

In a large bowl mix the water, milk, and egg. Slowly add the flour, baking powder, salt, and sugar. Mix well. Add the nutmeg, mixing well.

In a Dutch oven heat 3 inches of vegetable oil over medium-high heat until hot. Drop the batter by spoonfuls into the oil. Fry, turning 2 or 3 times, until golden brown. Drain on paper towels. Dredge in the confectioners’ sugar. Serve warm.

Makes 1½ dozen beignets
