Chocolate Banana Chocolate Chip Cookies
1¼ cups all-purpose flour
¾ cup whole-wheat flour
⅓ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
1 cup firmly packed light brown sugar
¼ cup granulated sugar
½ cup (1 stick) butter or margarine, softened
2 large eggs
1 teaspoon pure vanilla extract
3 small extra-ripe bananas, thoroughly mashed
1 cup semisweet chocolate chips
1 cup chopped walnuts
Preheat the oven to 350 degrees. Grease a cookie sheet. Set aside.
In a large bowl combine the flours, cocoa powder, baking powder, cinnamon, and salt.
In another bowl combine the sugars and butter and beat until fluffy. Add the eggs, vanilla, and bananas. Add the sugar mixture to the flour mixture and beat until smooth. Stir in the chocolate chips and walnuts. Drop by tablespoonsful, 2 inches apart, onto the prepared cookie sheet. Add a little flour if batter is runny.
Bake 15 minutes. Let cool on the pan for about 2 minutes. Remove to a cooling rack. Store tightly covered. These also freeze well.
