Crispy Lemon Cookies

1 (18.25-ounce) package lemon cake mix

1 cup crisp rice cereal

½ cup (1 stick) butter or margarine, melted

1 large egg, lightly beaten

Preheat the oven to 350 degrees. In a large bowl combine the cake mix, cereal, butter, and egg, blending well. Form the dough into 1-inch balls. Place 2 inches apart on an ungreased cookie sheet. Flatten with a fork. Bake 9 to 12 minutes, or until very light golden brown around the edges. Cool 1 minute and remove to a cooling rack.

Makes 3 to 4 dozen cookies
