Maurya’s Lemon Chip Cookies

⅔ cup margarine, softened

¾ cup sugar

1 large egg

1 teaspoon lemon extract

1¼ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

1 (6-ounce) package lemon chips

Preheat the oven to 225 degrees.

In a large bowl cream the margarine, sugar, egg, and lemon extract. Add the flour, baking soda, and salt, stirring until well mixed. Fold in the lemon chips. Drop by teaspoonsful onto an ungreased cookie sheet. Bake 10 minutes. Increase the oven temperature to 375 degrees and bake an additional 2 to 3 minutes. Cool the cookies on wire racks.

Makes 2 dozen cookies
