1 cup chopped dates
1 cup chopped prunes
1 cup raisins
½ cup (1 stick) butter or margarine
1 cup cold water
2 large eggs
1 teaspoon baking soda
½ teaspoon salt
1 cup whole-wheat flour
1 cup chopped nuts
½ teaspoon cinnamon
¼ teaspoon nutmeg
Confectioners’ sugar (optional)
Preheat the oven to 350 degrees.
In a saucepan combine the dates, prunes, raisins, butter, and water. Bring the mixture to a boil over medium heat. In a large bowl mix the eggs, baking soda, salt, flour, nuts, cinnamon, and nutmeg. Stir in the date mixture. Pour into an 11 × 7-inch pan, and bake 30 minutes. Cool and sprinkle with confectioners’ sugar, if desired, before serving. The date bars can be frozen.
