Carrot Bars

BARS:

2 cups sugar

1½ cups vegetable oil

4 large eggs

3 (4-ounce) jars baby food carrots

2½ cups all-purpose flour

1 teaspoon salt

2 teaspoons baking soda

2 teaspoons cinnamon

½ cup chopped nuts (optional)

FROSTING:

1 (3-ounce) package cream cheese, softened

¼ cup (½ stick) butter or margarine, softened

1 teaspoon vanilla

2 cups confectioners’ sugar, sifted

Preheat the oven to 350 degrees. Grease and flour a 13 × 9-inch pan.

For the bars, in a large bowl combine the sugar, oil, eggs, carrots, flour, salt, baking soda, cinnamon, and nuts, if desired. Mix well. Pour into the prepared pan. Bake 30 to 40 minutes, or until a wooden pick inserted in the center comes out clean. Cool completely before frosting.

For the frosting, in a medium bowl beat together the cream cheese, butter, and vanilla until fluffy. Gradually add the confectioners’ sugar, beating until smooth. Frost the bars.
