BROWNIE:
½ cup (1 stick) butter
2 (1-ounce) squares unsweetened baking chocolate
1 cup sugar
2 large eggs
¾ cup all-purpose flour
FILLING:
4 cups confectioners’ sugar
2 (3-ounce) packages cream cheese, softened
6 tablespoons butter, softened
2 teaspoons vanilla extract
TOPPING:
1 (1-ounce) square unsweetened baking chocolate, melted
Preheat the oven to 350 degrees. Grease an 8 × 8-inch baking pan.
For the brownie, in a 2-quart saucepan melt the butter and chocolate over medium heat, stirring constantly, 4 to 6 minutes, or until smooth. Stir in the sugar, eggs, and flour until well blended. Spread into the prepared pan. Bake 25 to 30 minutes, or until the brownie begins to pull away from the sides of the pan. Cool on a wire rack.
For the filling, in a small bowl combine the confectioners’ sugar, cream cheese, butter, and vanilla extract. Beat at medium speed, scraping the bowl often, until creamy. Spread over the cooled bars. Drizzle with the melted chocolate.
