BATTER:
1¼ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
¾ cup sugar
1 large egg
½ cup milk
1 teaspoon vanilla extract
¼ cup raisins (optional)
2 apples, peeled and cut in eighths
SAUCE:
¼ cup margarine
¼ cup firmly packed light brown sugar
½ teaspoon cinnamon
1 tablespoon margarine
Preheat the oven to 350 degrees. Coat a 9 × 9-inch baking dish with cooking spray.
In a large bowl mix the flour, baking powder, salt, sugar, egg, milk, vanilla, and raisins, if desired. Pour into the prepared baking dish. Lay the apples evenly on top of the batter.
In a medium saucepan melt the margarine. Add the brown sugar and cinnamon. Pour over the apples. Dot the top with the margarine. Bake 25 to 35 minutes. Serve warm or cool.
