Old Southern Grated Sweet Potato Pudding
½ cup (1 stick) butter, softened
1 cup cane syrup
1 cup whole milk
4 cups grated sweet potatoes
1 teaspoon salt
½ teaspoon ground cloves
1 tablespoon ground allspice
1 tablespoon ground cinnamon
1 cup heavy cream, whipped
1 cup raisins (optional)
3 large eggs, beaten
Preheat the oven to 375 degrees. Grease a 2-quart baking dish.
In a large bowl mix the butter, cane syrup, milk, sweet potatoes, salt, cloves, allspice, cinnamon, whipped cream, and raisins, if desired. Stir in the eggs. Pour the mixture into the prepared baking dish. Bake 40 minutes, stirring the crust to the middle as it forms on the edges. Do this several times during the baking process.
Note: This recipe can also be cooked all day on low heat in a slow cooker.
Serve warm.
