Cowboy Peach Cobbler

3 cups sliced peaches

¼ cup plus 3 tablespoons sugar, divided

1 tablespoon lemon juice

1 teaspoon almond extract

1½ cups all-purpose flour

½ teaspoon salt

1 tablespoon baking powder

⅓ cup shortening or soft margarine

½ cup milk

1 large egg

Preheat the oven to 350 degrees. Grease an 8 × 8-inch pan.

Arrange the peaches in the prepared pan. In a small bowl combine ¼ cup of the sugar, the lemon juice, and almond extract. Sprinkle over the peaches. Bake 10 minutes.

In a medium bowl combine the flour, salt, baking powder, and 1 tablespoon of the sugar. Cut in the shortening until crumbly. Add the milk and egg. Stir just until moistened. Spread the batter over the hot peaches and sprinkle with the remaining 2 tablespoons sugar. Increase the oven temperature to 375 degrees. Bake the cobbler 40 minutes.
