Heavenly Date Nut Pudding

½ cup (1 stick) butter, softened

1 cup sugar

2 large eggs, beaten

1 cup milk

1½ tablespoons all-purpose flour

1½ teaspoons baking powder

1 cup pitted, chopped dates

1 cup chopped walnuts or pecans

Whipped cream, for garnish

Preheat the oven to 325 degrees. Grease a glass 8 × 8-inch baking pan.

In a large bowl cream the butter. Gradually add the sugar until light and fluffy. Add the eggs, milk, flour, and baking powder. Mix well. Fold in the dates and walnuts. Pour into the prepared baking dish. Bake 50 to 60 minutes, or until the pudding is set. Let cool. Serve with whipped cream.

Makes 6 to 8 servings
