4 large oranges
½ cup plus 2 tablespoons hot water
⅓ to ½ cup honey
1 teaspoon rose water
1 cup chopped, almonds
1 tablespoon butter
1 teaspoon salt
1 (3-ounce) package cream cheese, softened
½ cup heavy cream
Using a vegetable peeler, carefully remove the peel from 1 orange. Cut into 2-inch strips and cook in a saucepan with the hot water. Add the honey and rose water, and cook slowly until the orange peel is translucent. Remove from the stove.
Peel the oranges and remove all the white pith. Slice the oranges thin, removing any seeds. Heat the slices in the cooked peel and syrup for 3 minutes. Cool and place the orange slices and syrup in 6 serving dishes.
Preheat the oven to 400 degrees. In a small oven-safe bowl combine the almonds, butter, and salt. Place on a baking sheet and brown 15 minutes, stirring occasionally. Remove from the oven and set aside.
In a medium bowl combine the cream cheese and heavy cream. Beat until smooth. Spoon the sauce over the orange slices. Sprinkle with the toasted almonds. Serve warm.
