Microwave Peanut Brittle

1 cup sugar

½ cup lily white corn syrup

1½ cups salted peanuts

1 tablespoon butter

1 teaspoon vanilla

1 teaspoon baking soda

Coat a 1½-quart microwave-safe dish with cooking spray. Add the sugar and corn syrup. Microwave on high for 3 minutes 40 seconds. Stir in the peanuts. Microwave on high for 3 minutes 30 seconds. Add the butter and the vanilla. Stir and microwave on high for 1 minute 40 seconds. Add the baking soda, and stir until foamy. Quickly pour and spread the mixture onto a well-greased cookie sheet. Cool and break into pieces.
