1 sleeve saltine crackers
1 cup (2 sticks) butter
1 cup firmly packed dark brown sugar
¼ teaspoon baking soda
Walnuts, pecans, or chocolate chips (optional)
Preheat the oven to 350 degrees. Line a baking pan with aluminum foil. Spray lightly with cooking spray. Lay the crackers in rows to cover the entire pan.
In a small saucepan melt the butter and brown sugar. Bring to a boil, stirring constantly, for 3 minutes. Remove from the heat and add the baking soda, stirring well. Pour the mixture over the crackers and bake 6 to 8 minutes. (The crackers will look like they are floating in bubbles.) Remove and top with nuts or chocolate chips, if desired. Cool in the refrigerator until set. Break into pieces and store in airtight containers in the refrigerator.
