This is an Ohio favorite.
1½ cups peanut butter
½ cup (1 stick) butter, softened
2 cups confectioners’ sugar
1 teaspoon vanilla
2 tablespoons vegetable oil
1 (6-ounce) package semisweet chocolate chips
In a large bowl beat the peanut butter and butter. Add the confectioners’ sugar and vanilla. Mix well. Roll into balls and place on waxed paper-lined cookie sheets. Refrigerate until chilled.
In a microwave-safe bowl combine the oil and chocolate chips. Microwave on high for 1 minute, or until the chocolate is melted. Using a toothpick, dip half of each peanut butter ball into the melted chocolate. Return to the cookie sheet and refrigerate until ready to serve.
