Potato Candy

1 small or medium boiled potato

1½ teaspoons vanilla

1 (1-pound) package confectioners’ sugar

Confectioners’ sugar

1 cup peanut butter

In a medium bowl mash the potato. Add the vanilla. Mix the pound of confectioners’ sugar with the mashed potato until combined enough to roll out. Sprinkle additional confectioners’ sugar on a table or board. Roll out the potato mixture. Spread with the peanut butter, and then roll up jelly-roll fashion. Wrap in plastic wrap, chill, and then cut into slices. Store in an airtight container.
