Frozen Orange Mini Cheesecakes

1 (8-ounce) container light spreadable cream cheese

1 (12-ounce) can thawed undiluted frozen orange juice concentrate, divided

1 tablespoon sugar

2 tablespoons grated orange rind

Chocolate sauce or raspberry purée

Grated orange rind, for garnish (optional)

In a large bowl combine the cream cheese with 8 ounces of the orange juice concentrate. Use the remainder for drinking or another use. Blend in the sugar and grated orange rind.

Line a muffin tin with 8 paper liners. Divide the filling evenly between the liners. Freeze for 2 hours or until firm. Before serving, remove the paper liners. Drizzle chocolate sauce or raspberry purée on a serving plate. Arrange the cheesecakes on the plate and garnish with grated orange rind, if desired.
