Royal No-Bake Chocolate Cheesecake
1½ cups semisweet chocolate chips
1 (8-ounce) plus 1 (3-ounce) packages cream cheese, softened
½ cup sugar
¼ cup (½ stick) butter, softened
2 cups frozen whipped topping, thawed
1 (8-inch) chocolate cookie piecrust
In a microwave-safe bowl melt the chocolate chips on High in the microwave 1½ to 2 minutes, or until smooth. Cool.
In a medium bowl beat the cream cheese, sugar, and butter together on medium speed with an electric mixer for 2 to 3 minutes.
Stir in the melted chocolate chips. Fold in the whipped topping. Spoon the mixture into the piecrust and refrigerate until ready to serve.
Makes 6 to 8 servings
