1 cup olive oil
1 cup sugar
1 cup port
2 tablespoons baking powder
4½ cups all-purpose flour
Confectioners’ sugar
Preheat the oven to 350 degrees.
In a large bowl combine the olive oil, sugar, port, and baking powder. Begin to add flour until you reach a soft, pliable consistency. Mix thoroughly (no kneading required). Flour a cutting board. Divide the dough into approximately equal portions, about a half-dollar in size. Roll each portion into a long pencil shape and twist into a knot. Place the biscuit knots on ungreased cookie sheets. Bake 20 minutes, or until light brown on top and dark on the bottom. Cool on wire racks. Sprinkle with confectioners’ sugar, if desired.
