Grandma Sarah’s Banana Bread

1 cup (2 sticks) margarine

2 cups sugar

4 large eggs, well beaten

2 teaspoons baking soda

¼ teaspoon salt

2½ cups all-purpose flour

6 ripe bananas, mashed

1 cup chopped walnuts or pecans (optional)

Preheat the oven to 350 degrees. Coat two 9 × 5-inch loaf pans with cooking spray. Set aside.

In a large bowl cream together the margarine and sugar. Add the eggs, baking soda, salt, and flour, mixing well. Add the bananas and nuts, if desired. Divide the batter among the loaf pans. Bake 50 minutes, or until a wooden pick inserted in the center comes out clean.

Makes 2 loaves
