Zucchini Bread

3 large eggs

1 cup vegetable oil

2½ cups sugar

2 teaspoons vanilla

2 cups grated zucchini, well drained

3 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

¼ teaspoon baking powder

2 teaspoons ground cinnamon

Chopped nuts, raisins, or chocolate chips (optional)

Preheat the oven to 350 degrees. Grease and flour two 9 × 5-inch loaf pans. Set aside.

In a large bowl beat the eggs, oil, sugar, and vanilla. Fold in the zucchini. Let stand 1 minute.

In a medium bowl combine the flour, baking soda, salt, baking powder, and cinnamon. Add to the zucchini mixture. Fold in nuts, raisins, or chocolate chips, if desired. Spoon the mixture evenly into the prepared loaf pans.

Bake 50 to 60 minutes, or until a wooden pick inserted in the center comes out clean.

Makes 2 loaves
