Oven-Baked Apple Pecan Brunch Cake

2 tart apples, peeled and sliced thin to equal 3 cups

¼ cup (½ stick) margarine

¼ cup chopped pecans

¾ cup pancake mix

3 large eggs

½ cup milk

⅓ cup sugar, divided

1 teaspoon cinnamon

Sour cream, for garnish

Warm maple syrup, for garnish

Preheat the oven to 450 degrees. Grease a 9 × 9-inch baking dish. Set aside.

In a medium skillet sauté the apples in the margarine until tender. Pour into the prepared baking dish. Sprinkle the pecans over the apples.

In a medium bowl combine the pancake mix, eggs, milk, and 1 teaspoon of the sugar, mixing well. Pour evenly over the apple mixture. Mix the remaining sugar with the cinnamon and sprinkle on top. Cover tightly with aluminum foil and bake 10 to 12 minutes, or until the batter is puffed and the sugar is melted. Serve with sour cream and warm maple syrup.
