Tropical Smoothie

This is another favorite smoothie of mine, especially on a hot summer day. The coconut water complements the juiciness of the pineapple (although pineapple juice may be substituted for the coconut water in a pinch). The fruits in this smoothie are rich sources of antioxidants; the pineapple and papaya contain strong digestive enzymes as well. Makes about 3½ cups

1 (11.2-ounce) container coconut water

1 ripe banana, peeled

1 cup fresh or frozen pineapple chunks

1 cup fresh or frozen papaya chunks

½ cup fresh or frozen mango chunks

3 tablespoons soaked almonds (page 27), drained

Blend all the ingredients in a blender until smooth. Pour the smoothie into glasses and serve immediately.

Very Berry Smoothie

This smoothie is my kids’ favorite: They love the vibrant color and flavor of the berries. Any one berry or any combination of berries may be substituted, so use what is in season and on hand. This smoothie is the perfect place to use the frozen acai bars you’ll find in the frozen foods section of many natural foods stores, as the acai blends right into the berries, without affecting their color. I also like knowing that my children are getting the extra benefits of this superfood, including antioxidants, fiber, and so much more. Makes about 3½ cups

2 cups berry juice or grape juice

1 cup fresh or frozen blueberries

1 cup hulled fresh or frozen strawberries

½ cup fresh or frozen raspberries

1 (1-inch) chunk frozen unsweetened acai berry bar

2 dates, pitted

Blend all the ingredients in a blender until smooth. Pour the smoothie into glasses and serve immediately.
