LEMON SORBET

Sorbetto di Limone

SERVES 6 (IF GRANDPA IS NOT HOME)

2 cups sugar

2 cups water

3 tbsp. vodka

2 cups lemon juice

Zest of 2 lemons

1 really full tbsp. mascarpone cheese

Put the sugar, water, and vodka into a pan and bring to a boil, then turn the heat down and continue to simmer for 5 minutes.

Once the liquid is clear and syrupy, remove it from the heat and allow it to cool for 15 minutes. When it has cooled, mix it in a glass or ceramic bowl with the lemon juice and zest and place it in the freezer for 1 hour.

Add the mascarpone and stir until completely mixed. Adjust for sweetness if the lemon flavor is too strong, then place it back in the freezer and leave it for at least an hour before you check it.

When it has started to freeze, use a fork to scrape down the sides of the bowl—you can also mix everything a little if you want, though you don’t have to—then put it back in the freezer. Repeat as often as possible over the next 24 hours, every hour or so when you’re around and awake.

When it has set completely but is still soft—thick enough to hold on a spoon but thin enough to drink out of a glass—enjoy it!
