SALADS
PERFECT FOR LUNCH OR AS A SIDE
Tabbouleh is one of my absolute favourite side dishes. It is so zingy and vibrant, and has a serious amount of nutrients in it from the herbs. Perfect as part of a salad, or as a side to Mediterranean dishes, especially grilled halloumi or falafel.
Serves: 1 for lunch or 2 as a side
25g (1oz) bulgur wheat
1 large tomato, diced
large bunch flat-leaf parsley, roughly chopped
small bunch mint, roughly chopped
1 small red onion, finely chopped
2 teaspoons capers
juice of ½ lemon
juice of ½ lime
3 tablespoons olive oil
sea salt and black pepper
Place the bulgur wheat in a saucepan and cover with boiling water. Simmer for around 25 minutes, until the wheat has enlarged and softened. Drain and allow to cool for a few minutes, then transfer to a bowl.
Add the remaining ingredients with salt and pepper to taste, and toss together well.
