PERFECT FOR A LIGHT DINNER OR LUNCH
Minted quinoa and feta burgers
These make a great little alternative to meat burgers: crunchy, rich and filling. I love them with a salad and they work really well in buns too, like a regular burger.
Makes: 4–6
250g (1½ cups) quinoa
2 eggs, beaten
2 teaspoons dried oregano
small bunch mint, finely chopped
1 clove garlic, finely chopped
120g (4¼oz) feta cheese, crumbled
olive oil, for frying

Place the quinoa in a saucepan and cover with boiling water. Simmer for around 20 minutes, or until it is cooked (it will soften and a small tail-like projection will appear on the side). Pour into a sieve and set aside to drain.
In a bowl, mix the drained quinoa with the eggs, oregano, mint, garlic, feta and pepper to taste. The mixture should stick together when squeezed. Shape into 4-6 patties.
Fry the patties in a little olive oil for 4 minutes each side, or until golden and crispy.
