PERFECT FOR DINNER
I’m absolutely obsessed with squid. It is incredibly high in that all-important selenium, alongside good amounts of zinc, which supports immune health. This is great served in a salad, with a few rocket (arugula) leaves as a starter, or even with some cooked quinoa.
Serves: 1
olive oil, for oiling
2–3 prepared squid tubes
For the spice mix
¼ teaspoon ground cinnamon
¼ teaspoon smoked paprika
¼ teaspoon ground cumin
¼ teaspoon garlic granules
sea salt and black pepper
Mix the spices together in a small bowl, with salt and pepper to taste. Lightly oil a griddle pan and place over a high heat until hot.
Sprinkle a good coating of the spice mix onto each side of the squid tubes. Lay the squid gently in the hot pan and cook for 1–2 minutes, then turn and repeat on the other side before serving hot.
