GOOD FATS
PERFECT AS A MORNING SNACK
Matcha is Japanese green tea powder. Its flavour is absolutely divine and it is packed up to the eyeballs with antioxidants.
Serves: 2
120g (4¼oz) dates
100g (3½oz) cashew nuts
65g (2¼oz) shelled pistachios
1 heaped tablespoon coconut oil
2 heaped teaspoons matcha powder
desiccated (dried shredded) coconut, for coating
Place all the ingredients except the desiccated (dried shredded) coconut in a food processor and pulse until a smooth, green, nutty dough has formed.
Break off thumb-sized pieces of the dough and roll into balls. Roll the balls through the coconut to coat, then place on a plate and refrigerate for a few hours to set.
