Lee Nelson
Dr. Lee Nelson is a New Zealand citizen who received his medical training in the United States. For many years, Lee has believed that the best medicine is preventive – take well people and keep them well.
In 1997, Lee was diagnosed with a potentially lethal form of prostate cancer. He reviewed over 2000 medical papers on prostate cancer and consulted with the top specialists in the field, ultimately devising his own treatment plan that combined standard medical treatment with complementary therapies, such as diet, supplements, and exercise. To help others through the maze of treatment choices and side effects, Lee wrote a 450-page book entitled Prostate Cancer Prevention and Cure. Published in 2003, this book is still the best-selling book on prostate cancer in New Zealand. One hundred twenty pages of this book are devoted to nutrition. Although Lee has retired as a practising doctor, he still consults with men with prostate cancer, assisting them in understanding their disease and making intelligent treatment choices. For many years, he has been interested in nutrition and other methods for maintaining optimal health and longevity.
Anne Pen Lee
Anne Pen Lee received her training as a chef from Auckland University of Technology and learned the art of food presentation at award-winning Hopgoods Restaurant in Nelson, New Zealand.
Pen and Lee have been partners for 16 years, during which time Pen has integrated Lee’s knowledge of functional, healthy nutrition into her culinary preparations, resulting in beautifully presented, sumptuous and delicious culinary creations. At the Split Apple Retreat, Pen offers optional functional food cooking lessons which are very popular with guests.
