ICE CREAM SANDWICH
When you’re lucky to be in the possession of both excellent vanilla ice cream and decadent chocolate chip cookies, there’s only one thing left to do: make ice cream sandwiches, of course. We’ve yet to meet a single soul who doesn’t love a good ice cream sandwich, and we certainly think it makes any party better. Be sure to freeze your sandwiches before eating them—otherwise the ice cream oozes out at the edges when you bite into them.
MAKES 1 ICE CREAM SANDWICH
1 scoop Vanilla Ice Cream
Place the ice cream between the flat sides of the cookies, press down to compress, and using a spoon or a knife, smooth out the edges. Place on a wax-paper-lined tray and freeze for 15 to 20 minutes or until completely firm.
