CINNAMON “S” COOKIES
These are among my favorite breakfast cookies. Their rich cinnamon flavor is the perfect companion to a hot cup of coffee.

¼ POUND BUTTER, SOFTENED
1/2 CUP BROWN SUGAR
1 EGG
11/2 CUPS FLOUR
1/2 TEASPOON BAKING POWDER
2 TEASPOONS CINNAMON
2 TABLESPOONS BROWN SUGAR

1. Preheat oven to 375°F.
2. In an electric mixer, cream the butter and 1/2 cup brown sugar until light. Add the egg. Mix until blended.
3. On low speed, gradually add the flour and baking powder. Mix until just blended to form a soft dough.
4. On a lightly floured surface, roll the dough into pencil-width ropes about 5 inches long.
5. Combine cinnamon and brown sugar in a small bowl.
6. Roll dough strips in the sugar mixture. Form into an “S” shape and place on a parchment-lined cookie sheet, spacing cookies 2 inches apart.
7. Bake for 12 to 15 minutes, or until the edges begin to brown.
8. Remove cookie sheet from the oven. Using a metal spatula, remove the cookies from the cookie sheet onto a wire cooling rack. Cool. Store in an airtight container.
