2 EGGS
1/3 CUP SUGAR
1/2 CUP MILK
1 TEASPOON CINNAMON
¼ TEASPOON SALT
3 TEASPOONS BAKING POWDER
2 CUPS FLOUR
VEGETABLE OIL FOR FRYING
1. Using an electric mixer, beat eggs and sugar until well blended. Add milk, cinnamon, salt, baking powder, and flour. Beat until smooth. Cover the batter with plastic wrap. Let the batter rest at room temperature for 15 to 20 minutes.
2. Heat 3 inches of oil in a large saucepan over medium heat. Drop ¾ teaspoon of batter into hot oil. Fry until golden, about 3 minutes. Remove with a slotted spoon onto paper towels. Roll in sugar. Serve warm or cooled.
