August Fig Cookies
Ingredients
- 1/2 cup butter, softened
- 1/2 cup white sugar
- 1/4 cup golden brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/2 cup fresh figs, halved
- 1/2 cup chopped walnuts
Direction
- Preheat an oven to 190°
C/375°
F then grease 2 baking sheets.
- By hand, mix brown sugar, white sugar and butter in a bowl. Add vanilla extract and egg; mix to combine. In another bowl, mix salt, cinnamon, baking powder and flour; mix into sugar mixture.
- Scoop meat from figs; keep 2 tbsp. Chop scooped middles and figs; Fold walnuts and chopped figs into cookie dough.
- By spoonfuls, drop batter on prepped baking sheet. Put small amounts of leftover dig pulp on each mound.
- In preheated oven, bake for 12-15 minutes till cookie edges brown lightly.
