Australian Federation Biscuits
Ingredients
- 2/3 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1/2 teaspoon baking soda
- 1/4 cup hot water
- 1 1/2 cups chopped pitted dates
- 1 1/2 cups golden raisins
- 1 2/3 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 cup chopped walnuts
Direction
- Set the oven to 200°
C or 400°
F to preheat. Dissolve baking soda in a small bowl with hot water. Mix in raisins and dates; put aside.
- Cream sugar and butter together in a medium bowl until smooth. Beat in one egg at a time, then stir in raisin and date mixture. Mix cinnamon and flour together, then mix into batter until just combined. Lastly, stir in walnuts. Drop on prepped cookie sheet with tablespoonfuls of dough, placing them a minimum of 1 inch apart.
- In the preheated oven, bake about 8-10 minutes, until browned slightly. Let the cookies cool for 2 minutes on the baking sheet prior to transferring to a wire rack to cool thoroughly.
