Banana Cake Cookies
Ingredients
- 1/2 cup shortening
- 1 cup packed brown sugar
- 2 eggs
- 1 cup mashed bananas
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/2 cup chopped pecans
- 3 cups sifted confectioners' sugar
- 1 tablespoon butter, melted
- 3/4 teaspoon vanilla extract
- 3 tablespoons milk
Direction
- Turn the oven to 350°
F (180°
C) to preheat.
- Cream shortening, add brown sugar, whisking thoroughly. Add banana and eggs, whisk thoroughly.
- Sift together spices, salt, baking soda, baking powder, and flour. Add to the creamed mixture, stir thoroughly. Mix in pecans.
- Drop rounded tablespoonfuls of the dough onto oil-coated baking sheets, about 2-in. separately. Bake for 12 minutes. Cool on wire racks. Dip into the Powdered Sugar Icing with 1/2 of the cooled cookies.
- For the icing: Mix together 3/4 teaspoon vanilla extract, 1 tablespoon melted margarine or butter, and 3 cups confectioner's sugar. Add milk to reach the consistency you want (you may need to add a little more), whisking until smooth.
