Bette's Pineapple Cookies
Ingredients
- 4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 2 cups white sugar
- 1 cup drained crushed pineapple
- 1 cup vegetable shortening (such as Butter Flavor Crisco®
)
- 3 eggs, beaten
- 1 tablespoon lemon extract
Direction
- Set the oven to 175 °
C (350°
F) to preheat.
- In a bowl, sift salt, baking soda, and flour together.
- In a bowl, beat lemon extract, eggs, shortening, crushed pineapple and sugar together until fully blended. Put flour mixture into pineapple mixture; mix just until mixed. Place teaspoonfuls of dough, 2 inches apart, onto baking sheets.
- Bake in batches, for 12-15 minutes per batch in the prepared oven until tops are lightly browned. Place onto wire racks to cool.
