Chef John's Peanut Butter Cookies
Ingredients
- 1/2 cup unsalted butter
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 egg
- 1 1/4 cups all-purpose flour
Direction
- In a stand mixer, whip baking soda, baking powder, salt, peanut butter, brown sugar, white sugar and butter till becoming smooth.
- Scrape down the sides of the bowl and beater using a spatula. Put in egg and stir for roughly 60 seconds.
- Stir in flour gradually using the mixer on low setting. Scrape down the sides of the bowl and beater. Mix on medium setting for roughly half a minute till combined.
- Shape dough into a ball, use plastic to cover and let chill in the refrigerator for 2 to 3 hours.
- Preheat the oven to 190 degrees C (375 degrees F).
- Portion out cookie dough in equal-sized balls on the baking sheet covered with a silicone baking mat. Roll dough into smooth balls by moistened hands. Stamp each ball using a fork with a crisscross pattern.
- Bake in the preheated oven till becoming golden, about 10 minutes.
- Let stand on the baking sheet for 5 minutes prior to removing to the cooling rack.
