Chewy Gooey Cookies
Ingredients
- 3/4 cup peanut butter
- 1/2 cup butter flavored shortening
- 1 1/4 cups packed brown sugar
- 1 egg
- 3 tablespoons milk
- 1 tablespoon almond extract
- 1 cup all-purpose flour
- 3/4 cup rye flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1 cup semisweet chocolate chips
- 1/2 cup miniature marshmallows
Direction
- Set oven to preheat at 175°
C (350°
F). Prepare cookie sheets by greasing them.
- Cream the brown sugar, shortening, and peanut butter together in a medium bowl. Mix the almond extract, milk and egg into the mixture. Sift together the salt, baking soda, rye flour and all -purpose flour, add them into the creamed mixture and mix till just incorporated. Mix in the mini marshmallows and chocolate chips last.
- On the prepared cookie sheets, drop rounded teaspoonfuls of the cookies. In the preheated oven, bake to a golden brown or for 8 to 10 minutes. Let the cookies cool down on the baking sheets for 1 minute, then transfer to wire racks to cool thoroughly.
