Chocolate Peppermint Meringue Drops
Ingredients
- 3 egg whites
- 1/8 teaspoon cream of tartar
- 4 drops peppermint oil, or to taste
- 3/4 cup white sugar
- 1 drop red food coloring, or as needed (optional)
- 3 peppermint candy canes, crushed
- 1/2 cup chocolate chips
Direction
- Set the oven to 150°
C or 300°
F to preheat. Use parchment paper to line baking sheet.
- In a mixing bowl, use an electric mixer to beat together peppermint oil, cream of tartar and egg whites on medium-high speed until holds soft peaks. Beat in 1 tbsp. of sugar at a time, followed by food coloring, if you want, until the mixture holds stiff peaks and is glossy. Fold in chocolate chips and crushed candy canes extremely gently. Drop on prepped baking sheet with tablespoon of meringue.
- In the preheated oven, bake about 28-33 minutes, until dry. Allow cookies to cool on baking sheet on a rack about 20 minutes prior to taking out of parchment paper.
