Cranberry Oatmeal Drops
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup butter, softened
- 3/4 cup packed brown sugar
- 1 egg
- 1/4 cup milk
- 1 teaspoon orange zest
- 1 1/2 cups quick cooking oats
- 3/4 cup chopped cranberries
- 1/4 cup chopped walnuts
- 1 cup confectioners' sugar
- 1/2 teaspoon orange zest
- 1/4 teaspoon vanilla extract
- 2 tablespoons orange juice
Direction
- Start preheating the oven to 375°
F (190°
C). Grease the cookie sheets.
- Sift nutmeg, cinnamon, baking powder and flour together. Put aside. Cream sugar and butter in a medium bowl. Stir in orange zest, milk and egg. Put in the dry ingredients, then mix until blended well. Stir in nuts, cranberries and quick oats.
- Drop the dough by tablespoons about 2-inch apart onto prepared cookie sheets. Bake in prepared oven for 10-12 minutes, the cookies must be brown lightly. Transfer to cool on the wire racks.
- Stir vanilla, orange zest and confectioners' sugar together in a small bowl. Stir in orange juice, one tablespoon each time, until it reaches the preferred consistency. Sprinkle onto the cooled cookies.
