Dishpan Cookies IV
Ingredients
- 2 cups vegetable oil
- 2 cups brown sugar
- 2 cups white sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 1/2 cups rolled oats
- 4 cups cornflakes cereal
- 2 cups flaked coconut
- 1 1/2 cups salted peanuts
Direction
- Set the oven to 165°
C or 325°
F to preheat. Coat cookie sheets with grease.
- Cream white sugar, brown sugar and oil together in a big bowl until smooth. Beat in one egg at a time then stir in vanilla. Mix together salt, baking soda and flour, then stir into the sugar mixture. Stir in peanuts, coconut, cornflakes and rolled oats. Drop on prepared cookie sheets with heaping tablespoonfuls of dough with 3-4 inches apart. Flatten a little bit.
- In the preheated oven, bake for about 10-12 minutes, until top is browned slightly. Let cookies cool for a minute on baking sheet prior to transferring to wire racks to cool thoroughly.
