Granola Raisin Cookies
Ingredients
- 1 cup butter, softened
- 3/4 cup white sugar
- 3/4 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 3/4 cups granola
- 1 cup raisins
- 1/2 cup chopped, unsalted dry-roasted peanuts
Direction
- Set the oven to 375°
F (190°
C) and start preheating. Grease cookie sheets.
- Cream white sugar, brown sugar and butter together in a medium bowl. Whisk in vanilla and egg. Mix baking soda, salt and flour; stir into creamed mixture. Lastly, mix in peanuts, raisins and granola. Drop dough 2 inches apart onto prepared cookie sheets by heaping teaspoonfuls.
- Bake in the prepared oven for 12-15 minutes until cookies turn light brown around edges. Transfer from baking sheets to wire racks; cool.
