Hearty Breakfast Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup peanut butter
- 1 1/3 cups packed brown sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 1/3 cup water
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 cups quick cooking oats
- 1/2 cup wheat germ
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 teaspoons baking soda
- 1 cup raisins
Direction
- Preheat the oven to 350°
F (175°
C). Coat 2 baking sheets with oil or use parchment paper to line each of the baking sheets.
- Use an electric mixer to mix the vanilla, brown sugar, peanut butter and butter together in a big bowl until the mixture is creamy. Whisk in the water and eggs.
- Combine the cinnamon, wheat germ, flours, baking soda, salt and oats together. Add it into the peanut butter mixture. Mix in the dates or raisins. Use an ice cream scoop to place scoopfuls of the batter mixture onto the prepared baking sheet 2 1/2 inches away from each other. Lightly press down each scoopful of batter mixture.
- Put in the preheated oven and bake for 18-20 minutes. Let it cool down for 2 minutes on baking sheets then place it on wire racks. Keep the cookies in a tightly sealed container.
