Jumbo Banana Cookies
Ingredients
- 1/2 cup shortening
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 cup mashed bananas
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 teaspoon distilled white vinegar
- 3 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- 2 1/2 cups confectioners' sugar
- 2 tablespoons butter, softened
- 1/4 cup evaporated milk
- 1/4 teaspoon vanilla extract
Direction
- Mix vinegar, half cup evaporated milk, vanilla, bananas, eggs, white sugar, half cup of butter and shortening until creamy and light.
- Mix salt, baking soda and flour in another bowl. Add to the other mixture. Add nuts.
- Chill for 1 hour in the fridge.
- Transfer by teaspoonful on greased cookie sheet about 2 inches apart. Bake for 15 minutes at 375°
F (190°
C). Allow to cool; frost them.
- To prepare frosting: Combine 2 1/2 cups confectioners' sugar with 1/4 tsp vanilla, 1/4 cup evaporated milk and 2 tablespoons soft butter or margarine. Whisk until soft. Top over cooled cookies.
