No Sugar Raisin Cookies
Ingredients
- 1 1/2 cups raisins
- 1/2 cup peeled, cored and chopped apple
- 1 cup water
- 1/2 cup butter
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 cup quick cooking oats
- 2 eggs, beaten
- 3/4 cup chopped walnuts
Direction
- Mix water, apples and raisins in a medium saucepan. Boil and cook mixture for 3 minutes. Take away from the heat and mix in butter. Reserve to cool.
- Mix baking soda and flour together in medium bowl. Mix in the apple mixture, eggs and vanilla until thoroughly incorporated. Fold in nuts and oats. Cover the dough and refrigerate for 8 hours or overnight.
- Preheat an oven to 175°
C (or 350°
F). Oil cookie sheets. Drop by rounded spoonfuls on greased cookie sheet.
- Bake for 8 minutes to 10 minutes. Cool cookies for 5 minutes on baking sheet prior to transferring onto wire rack to cool fully.
